
I grew up in a meat and potatoes family. My daddy always had to have some sort of potato with our meal. Maybe that is why I now often combine the two. I also love stuffed barbecue potatoes when we go out to eat. Lately, we have been making our own twist on this favorite using lean ground turkey and Country Bob's Barbeque Sauce.
Ingredients:
1 pound ground turkey (you can use beef if you prefer)Country Bob's Barbeque Sauce
Country Bob's All Purpose Sauce (optional)
Country Bob's Seasoning Salt
Garlic powder
Onion powder
Black pepper
Large baking potatoes (quantity depends on size and how much meat you like in each)
Shredded cheddar cheese
Sour cream
Butter or margarine

Directions:
Wrap your potatoes in plastic wrap and microwave (I use the potato setting) until done. You can also wrap in tin foil and bake in the oven if you prefer. While the potatoes are baking, season your turkey meat. Season to taste with garlic powder, onion powder, black pepper and Country Bob's Seasoning Salt (start off with a little as you can always add more later). Then brown the meat and about a minute before you take it out of the pan, add Country Bob’s Barbeque Sauce and stir it in good and let it reduce to where there is very little liquid. Take the meat mixture off of the stove and then when your potatoes are ready, slice them down the middle and break them up a bit with a fork to make an area for "stuffing" them. Put a little butter or margarine on the potato then scoop the meat mixture on top. After that, sprinkle on the cheddar cheese (to taste). Add a dollop of sour cream on top. You could also add any other toppings you might like, such as chives or crumbled bacon, but we love them like this. We also sometimes add a little Country Bob's All Purpose Sauce on top and sprinkle with Country Bob's Seasoning Salt if we want a little more.We love this easy recipe so much that we make it about once a week lately. To us, it tastes just like barbecue without the work of firing up the barbecue pit, waiting hours for brisket to barbecue and chopping it all up. They also have less fat (great if you are cutting down on fat or red meat) and these are budget friendly, too! These are quite filling, so we don't always make a side with them, but they would go great with a simple tomato and lettuce salad and a big glass of sweet tea.
