Country Bob-B-Que Stuffed Potatoes
I grew up in a meat and potatoes family. My daddy always had to have some sort of potato with our meal. Maybe that is why I now often combine the two. I also love stuffed barbecue potatoes when we go out to eat. Lately, we have been making our own twist on this favorite using lean ground turkey and Country Bob's Barbeque Sauce.

Royall Chipotle Cheddar Burger

Royall Chipotle Cheddar BurgerIn our travels this week we found some Chipotle Cheddar Cheese. I love Chipotle any way it comes at ya, and you can see big pieces of pepper in this cheese. Patti picked some up, then we thought burgers! Oh, these were good.

Prep Time: 10 minutes
Smoke Time 30 minutes
Cook Time: 10 minutes
Grill: Royall Pellet Gril
Pellets: Mesquite


Ingredients: Burgers

  • 1 ½ lbs. ground sirloin
  • 1/2 lb. pepper bacon
  • 1/2 lb. sharp chipotle cheddar cheese, shredded + 6 slices
  • ½ cup Country Bob’s All Purpose Sauce
  • 1 small sweet onion, chopped
  • 2 Tbsp. minced garlic
  • 1 Tbsp. chipotle chili powder
  • ¼ tsp. coarse grind black pepper
  • ¼ tsp. Country Bob’s Seasoning Salt
  • Your favorite condiments

CB’s Big Bite Pork Chops

CB’s Big Bite Pork ChopsPatti went to local meat market and came back with these 2 inch pork chops as a surprise for me. I had said I wanted to grill some breaded chops and she went and got them for me. The breading was cheery with the sweetness of Country Bob’s Sauce.

That’s Patti looking like a walking billboard for Country Bob’s Sauce, she can put it so many things.  Served with our Garlic Skillet … Oh Man they were good!!!

Prep Time: 10 minutes
Cook Time: 30 minutes @ 300
Smoke Time: 30 minutes
Grill: Royall Pellet Grill

Seafood Stuffed Portobello Mushrooms

Mushrooms smoked and ready to eayWe love making these. Sometimes as a side dish, sometimes as a main course. Patti always makes extra. Especially if our Date Night is on a Friday night, we double or triple the recipe in case friends drop by over the weekend. They’re easy to microwave quickly. For a fancy lunch entrée, just add a side salad.

Quick Meal: Country Bob's Salmon Pitas

Country  Bob's Salmon PitasToday, we had an appointment so hubby went into work later than usual. I decided to make us a quick, healthy and tasty lunch. This is the type of meal I would usually make for dinner, though. It was super easy. I just took two salmon fillets from the freezer, defrosted them then baked them at 350 degrees for 11 minutes (until flaky). Before popping them into the oven, I brushed them with a little olive oil and sprinkled them with Country Bob's Seasoning Salt.

Country Bob’s Hula Burgers

Country Bob's Hula  Burgers

We love big, juicy burgers and we’re always looking for new ideas. Al at Country Bob’s gave us an idea for one of our new favorites. So, we took Al’s Hula burger and turned it into a full blown Luau by adding sweet red onion, savory Canadian bacon topped by smoked cheddar cheese and a grilled pineapple slice. Then, we filled the hole in the pineapple with a shot of Country Bob’s All Purpose Sauce.

Quick Weekday Dinner Idea

Tonight, we were all hungry and time got away from us. I didn't have a recipe or ingredients handy so I whipped up this tasty meal in no time flat.

It was SUPER easy. Here is how I made it. I took two cans of sliced new potatoes and drained them. I then took two large pats of butter and melted then in a pan. I added the potatoes then sprinkled the mixture with Country Bob's Seasoning Salt. I pan browned the potatoes until they were golden then added a little bit of canned, grated parmesan. I continued browning the mixtures, stirring constantly until crispy bits formed.

Zesty  Guacamole

Growing up in Fallbrook, California we had access to REAL avocados. My mother would make guacamole in a huge bowl and my dad would set up the waffle iron. Dad would heat up big flour tortillas in the waffle iron and sail them to your plate like a Frisbee. Then, we would fill them with guacamole and eat them like big burritos. Mom made it with bacon, sweet onions, tomatoes and cilantro. Over the years I have added red pepper and garlic. Oh, this is good stuff. We sometimes have it just for dinner.

I still smile when I remember one year when my grandmother came to visit from Texas. Mom made a batch of guacamole. My grandmother not being familiar with how to roll or eat a burrito had no clue on how to catch the tortilla when it came your way. Well, she made the mistake of asking my dad to “toss her a tortilla” then turned to talk to someone. I saw that thing sailing through the air and hit my grandmother right in the side of the head. She squealed and we all laughed to tears. In the years to follow she always kept an eye on him when it came to tortillas. Being a Marine through and through, Patti just waits for him to yell “incoming!”

They are all gone now, but for dad. I still have the memories of the love and fun we all shared at that big table with the tortillas flying in the air.
