1 pound frozen cod fillets
4 t lemon juice
8 slices bacon, halved
2 green peppers, chunked
16 pineapple chunks
16 cherry tomatoes
1/2 cup Country Bob's Barbeque Sauce
Country Bob's Seasoning Salt
Black Pepper
Methods/steps
Partially thaw fish and cut into 16 bite size pieces. Sprinkle with lemon juice, seasoning salt, and pepper. Partially cook bacon, drain off grease. Roll each fish piece with a half-slice of bacon, placing bacon on outside and secure with a toothpick. Boil green pepper chunks until partially cooked and drain well. Thread fish, pepper chunks, and pineapple chunks on a skewer, end with a cherry tomato. Broil about 15 minutes, turn and baste frequently with BBQ Sauce. Grilling is an option.
