Country Bob's Mexican Lasagna

3 teaspoon oil
1 cup chopped onion
1 to 1 1/2 lbs. ground beef or turkey
3 to 4 cloves minced garlic
1 can kidney beans, drained (12 to 15 ounces)
1 can diced tomatoes, drained (12 to 15 ounces)
8 ounce container sour cream
1/2 cup Country Bob's All Purpose Sauce
1 1/2 cups Colby Jack shredded cheese
4 to 6 eight or ten inch flour tortillas
6 teaspoon chili powder
3 teaspoon cumin powder
1/2 teaspoon dried oregano
1/4 to 1/2 teaspoon Country Bob's Seasoning Salt
1/4 teaspoon curry powder
1/4 teaspoon black pepper
Methods/steps
Mix together spices (chili powder, cumin powder, oregano, Country Bob's Seasoning Salt, curry powder, and black pepper) in small dish. In large skillet, heat oil on medium high. Add onion and saute 3 minutes. Add meat and garlic and half of spice mixture. Brown meat, breaking into small bits. Drain. Add Country Bob's All Purpose Sauce, beans, and tomatoes and the rest of spice mixture. Heat through. Turn off heat and add sour cream. Mix thoroughly. Spray 8 x 8 square pan or 9 inch round pan (3 inch deep) with cooking spray. Place one tortilla in bottom. Spoon some meat mixture over and cover with cheese. Repeat ending with a tortilla on top. Press down gently to ease out air bubbles. Cover with foil and bake 35 to 45 minutes at 375 degrees. Remove foil, sprinkle with cheese and bake 10 minutes more. Let rest 10 minutes before serving. Makes 4 huge servings or 6 regular ones. Top with your favorite taco toppings like lettuce, salsa or sour cream.
