1 lb macaroni noodles
6 tbsp butter
5 tbsp flour
1 lb block cheddar cheese (shredded)
1 lb block mozzarella cheese (shredded)
3 tbsp Country Bob’s Cajun Seasoning Salt
2 cups half and half
1 pound shrimp – peeled and deveined
1 tbsp olive oil

SHRIMP: Season shrimp with 1 tbsp Country Bob’s Seasoning Salt and olive oil. Stir to coat then set shrimp in the fridge to marinate.

MAC AND CHEESE: In a large pot, boil the macaroni noodles according to the instructions on the box. Drain and set aside. You can mix a little olive oil with the noodles so they do not stick to themselves.

In a separate pot, melt butter completely. Add flour and stir to combine creating a roux. Add 2 tbsp Country Bob’s Cajun Seasoning Salt and continue stirring the roux until it begins to darken a little in color. Add the half and half and stir. Bring to a simmer then add the shredded cheddar cheese and the mozzarella cheese. Once the cheese melts, add the noodles and stir to combine. Pour the contents of the pot into a casserole dish or pan and set aside.

Preheat the oven to 450. Heat a pan to medium heat and sear the shrimp for about 2-3 minutes per side. Until they begin to char a bit. Remove shrimp from pan and arrange on the mac and cheese. Place mac and cheese in the oven for 8-10 minutes, until the cheese begins to brown on top. Remove and let cool then serve!
