1 cup Oaxaca cheese
1 giant flour tortilla
1 pound beef country style ribs
2 tbsp Country Bob’s All Purpose Sauce
1 tbsp cumin
1 tbsp garlic powder
Salt and pepper
1/4 cup dark soda
Cilantro to garnish
Feta cheese to garnish
Pickled onions to garnish
Lime wedges
Directions

Season the country style ribs with cumin, garlic powder, salt and pepper. Using an instant pot or pressure cooker, activate the saute function. Brown the beef on all sides then turn off the saute function. Add Country Bob’s All Purpose Sauce and soda to the pressure cooker. Place the lid on the pot and pressure cook on high for 1 hour. Let pressure naturally release for 5 minutes. Remove beef and shred with a fork, then set aside. Add juices from the pot for extra flavor.

Heat a flat pan or griddle to medium heat. Place tortilla on the griddle and top with Oaxaca cheese and shredded beef. Close the tortilla and cook each side for about 4-5 minutes until the cheese has melted and the tortilla is toasted. Remove and cut into 4 slices. Serve with lime, cilantro, feta and pickled onions!
