Country Bob’s Baby Back Rib Chili

Baby back ribs in chili? Yes please! This rich chili is a mix of smoky and hints of sweetness. Pair it with cornbread or garlic bread!

Ingredients

Ingredients:

1 pound pre-cooked baby back rib meat (removed from bones)

1 yellow onion diced

4 cloves garlic minced

2 jalapenos diced

1/4 cup green onion diced (the white parts)

1 pound ground pork

1 can fire roasted diced tomatoes

1 can black beans

8 oz tomato sauce

1 cup chicken stock

2 tbsp Country Bob’s AP Sauce

2 tsp brown sugar

2 tsp garlic powder

2 tsp cumin

2 tsp chili powder

2 tsp paprika

2 tsp onion powder

2 tsp cayenne pepper (optional)

Salt and pepper

Directions

Heat a large pot to medium heat. Add olive oil to the pot then add the onion, garlic, jalapenos and green onion. Cook until soft, about 6 minutes.

Add the brown sugar, garlic powder, cumin, chili powder, paprika, onion powder, cayenne, salt and pepper to the veggies and stir until well mixed. Add the ground pork and stir in with the veggies. Brown pork and break up clumps for about 5-6 minutes.

Add the Country Bob’s AP Sauce along with chicken stock and stir. Once chili begins to bubble add the black beans, diced tomatoes and tomato sauce. Add the baby back rib meat to the pot and stir. Bring the pot to a boil then cover with a lid and reduce the temperature to low. Let the chili cook covered for about 2 hours and 45 minutes stirring every now and then. Uncover and cook for another 15 minutes uncovered and serve!
