Ingredients

Ingredients:

3 pound pork tenderloin

4 slices swiss cheese

1 large onion cut into strips

1 tbps olive oil

2 tbsp Country Bob’s Seasoning Salt

2 tsp garlic powder

2 tsp onion powder

6 slices bacon

1/2 cup Country Bob’s Original BBQ Sauce

Preheat oven to 425. Preheat a pan to medium heat. Place olive oil in the pan then add the onions. Caramelize for about 15 minutes. When onions are translucent and have a little char on them, remove from heat and set aside.

Using a sharp knife, butterfly the pork tenderloin then pound it as flat as you can. Season the tenderloin with Country Bob’s Seasoning Salt, Garlic Powder and onion powder.

Line one side of the tenderloin with swiss cheese and caramelized onions. Wrap the tenderloin like a cigar trying to keep all of the cheese and onions inside. Take strips of bacon and wrap them around the tenderloin to keep the onions and cheese inside.

Place tenderloin on a baking sheet with a rack and bake for 30 minutes. Remove from the oven and brush with Country Bob’s Original BBQ Sauce then return to the oven and increase heat to broil. Broil for 2-3 minutes until BBQ Sauce begins to caramelize then remove from oven.

Let tenderloin sit for 10 minutes then slice and serve!
