4 cups Romaine lettuce
1 cup purple cabbage
1/2 cup black beans
1 Corn on the cobb
1 Large Avocado sliced
1 cup Cherry Tomatoes cut in half
1/4 cup Green Onions Diced
1/2 red onion sliced
2 Chicken breasts
2 tbsp your favorite BBQ Seasoning
1/4 cup ranch
1/4 cup Country Bob’s Original BBQ Sauce
Prep veggies by chopping the romaine into bite sized pieces and adding to a bowl. Chop the cabbage, slice the cherry tomatoes, dice the green onions and slice the avocado. Add all of these plus the black beans to the salad and set aside.
Grill the corn on the cob until it has slightly charred. Cut the corn off the cob into the salad. Slice the red onion. You can add to the salad as is, or you may fry it to give the salad a good crunch.
Season the chicken breast with BBQ Seasoning and grill for 4-5 minutes per side, until juices run clear. Slice chicken into bite sized pieces and toss with a combination of Country Bob’s Original BBQ Sauce and ranch. Serve immediately!
