Country Bob’s Black Bean Chorizo Chili
Enjoy a hearty bowl of sweet and spicy chili with tangy pork chorizo and black beans.
1 pound Pork Chorizo
1 yellow onion diced
4 cloves garlic minced
2 jalapenos diced
1/4 cup green onion diced (the white parts)
1 can fire roasted diced tomatoes
3 cans black beans
2 cup chicken stock
2 tbsp Country Bob’s AP Sauce
2 tsp garlic powder
2 tsp cumin
2 tsp chili powder
2 tsp paprika
2 tsp onion powder
2 tsp cayenne pepper (optional)
Salt and pepper
Heat a large pot to medium heat. Add Chorizo and cook until done breaking up large pieces. Add the onion, garlic, jalapenos and green onion. Cook until soft, about 6 minutes.
Add the garlic powder, cumin, chili powder, paprika, onion powder, cayenne, salt and pepper to the pot and stir until well mixed. In a food processor, puree two cans of beans with 1 cup of chicken stock. Add this to the pot with the other can of beans, the other cup of chicken stock, Country Bob’s AP Sauce, and diced tomatoes.
Stir and bring the pot to a boil. Cover with a lid and reduce the temperature to low. Let the chili cook covered for about 1 hour stirring every now and then. Uncover and cook for another 15 minutes uncovered and serve!
Top with cheese, sour cream, green onions or diced red onion and some more Country Bob’s AP Sauce and enjoy!
