Ingredients:

4 lobster tails

Vegetable oil for frying

Dry Dredge

  • 1 cup flour

  • 1/2 cup corn meal

  • 1/4 cup corn starch

  • 1 tbsp Country Bob’s Cajun Seasoning

  • 1/2 tsp cayenne pepper

  • 1 tsp smoked paprika

  • 1/2 tsp lemon pepper

  • 1 tsp garlic powder

Wet Batter

  • 1 cup flour

  • 1/2 cup corn meal

  • 1/4 cup corn starch

  • 1 tbsp Country Bob’s Cajun Seasoning

  • 1/2 tsp cayenne pepper

  • 1 tsp smoked paprika

  • 1/2 tsp lemon pepper

  • 1 tsp garlic powder

  • 1 liter ice cold soda water

Dipping Sauce

  • 1/4 cup Mayo

  • 1 tbsp mustard

  • 1 tbsp hot sauce

  • Juice from half a lemon

  • 1 tbsp Country Bob’s Cajun Seasoning

Combine the dry dredge and wet batter ingredients (minus the soda water). Take the shell off the lobster tails, clean them and pat them dry. Coat in the dry dredge and let sit for 20-30 minutes in the fridge.

Make the dipping sauce by combining all the ingredients and mixing them together with a fork until well blended. Set aside in the fridge.

Heat oil in a deep pan to 325 degrees. Whisk the soda water into the wet batter then dip the tails and immediately place in the oil. Fry for 3-5 minutes until golden brown. You can top with parmesan and chopped parsley. Serve with the dipping sauce!
