Country Bob’s Habanero Honey BBQ Chicken Tacos
Satisfy your dad’s hunger this weekend with some street tacos right at home! Our Honey BBQ sauce will take ordinary chicken tacos to the next level.
6 Corn tortillas
4 boneless skinless chicken thighs
3 habanero peppers, seeded and diced
2 tbsp olive oil
1 tbsp garlic powder
1 tbsp chili powder
1 tbsp dried cilantro
2 tsp cumin
1/2 cup Country Bob’s Honey BBQ Sauce
or 1/2 cup Country Bob's All Purpose Sauce
1/2 cup water
1 cup Oaxaca Cheese
Salt and pepper
Season chicken thighs with garlic powder, chili powder, dried cilantro, cumin, salt and pepper. Heat a Dutch oven or large pot to medium heat. Add olive oil and brown the chicken on both sides.
Add the habanero peppers, water and Country Bob’s Honey BBQ Sauce. Stir to coat the chicken. Bring mixture to a slight boil then cover the pot and reduce the heat to medium low. Let chicken simmer for 1 hour.
After an hour, the chicken should easily shred apart. Remove from heat and shred the chicken in the sauce.
Heat a large pan to medium heat. Add 1 tbsp of olive oil and place tortillas on the pan. Place a dollop of Oaxaca cheese on each tortilla then top with BBQ chicken. Once the tortilla starts to brown, about 3-4 minutes, flip one side over creating a taco. Cook each side for about 5 minutes per side until the cheese is fully melted inside and starting to spill out.
Remove from the pan and top with your choice of jalapenos, guacamole, pico de gallo, or more cheese and serve!
