Directions

1

Heat a pan to medium heat and add 1 tbsp of olive oil. Place the sliced sweet onion in the olive oil and cook until the onion starts to caramelize. About 10 minutes. Remove the onion from the pan and set aside.

2

Cut the Ciabatta bun in half and toast in the same pan that the onions were in. Remove the bun, reduce the heat to medium low and add the butter to the pan. Melt the butter with the flour to create a roux. Stir the butter flour mixture for 3-5 minutes until it begins to brown. Add cream, Country Bob’s BBQ Sauce and smoked gouda cheese to the roux and stir constantly so the mixture doesn’t burn. Once the mixture is well blended and thick, turn heat to low and set aside.

Season the steak with salt, pepper and garlic powder then sear it on a hot grill until the internal temperature is around 132 degrees. Let the steak rest for 5 minutes then slice into strips.

Build the sandwich by placing some BBQ cheese sauce on the ciabatta bun followed by strips of steak. Top with caramelized onions, some more BBQ sauce and some more cheese sauce and serve!
