Country Bob's Southwestern Meatloaf

Meatloaf is a classic comfort food. Try our smoked version glazed in a sweet and tangy southwest sauce. Serve on a bed of mashed potatoes drizzled with Honey BBQ sauce.

Ingredients

1 pound lean ground beef

1 medium red onion chopped

1 large egg

4 cloves garlic

1/4 cup cilantro

1 jalapeno diced 

1 red bell pepper diced

1/4 cup panko bread crumbs

1/4 cup milk

1 tbsp Country Bob’s Seasoning Salt 

2 tsp paprika

2 tsp chili powder

2 tsp black pepper 

2 tsp cumin

2 tsp crushed red pepper 


Sweet and Tangy BBQ Sauce 

1/2 cup Country Bob’s Honey BBQ Sauce 

2 tbsp ketchup

2 tbsp hot sauce 

1 tbsp apple cider vinegar

1 tsp garlic powder 

1 tsp onion powder

Set smoker temperature to 275. Combine all of the meatloaf ingredients in a large bowl and mix with your hands. Once all ingredients are well mixed, place the meatloaf in a parchment lined shallow baking pan. Level the meat so it’s flat in the pan then using a toothpick, poke the meat mixture several times to allow the smoke to penetrate. Smoke the meatloaf for 2 hours.

While the meatloaf is smoking, combine the BBQ sauce ingredients in a sauce pan over medium low heat. Once the ingredients are well mixed and simmering, about 8 minutes, remove from heat and set aside.

Remove meatloaf from the smoker and let sit for 5 minutes. Cut into individual squares and plate on top of a bed of mashed potatoes. Cover in the BBQ sauce and top with crispy onions and it’s ready to serve! You can also use the leftover juices from the meat as gravy for your potatoes.
