

Cowboy Beef Stew
It's time for a hearty, delicious beef stew. Serve with a salad and some buttered rolls and a fire blazing in the fireplace, and we're talking home sweet home.


Ingredients
2.50 lbs. beef stew meat, cut into 1" cubes
4 tbsp. oil or bacon drippings
0.75 cup all purpose flour
1 tbsp. Country Bob’s Seasoning Salt
1 tsp. dried thyme
1 tsp. black pepper
3 cups beef broth
1.50 cups Country Bob’s All Purpose Sauce
4 tbsp. dried garlic
4 medium russet potatoes, cut into large chunks
6 carrots, peeled and cut in half
4 celery stalks, cut in half
1 large sweet onion, sliced thick
Directions
Heat oil in heavy large pot over medium-high heat. Add beef and sauté until brown on all sides.
Add garlic and sauté 1 minute.
Add beef stock, Country Bob's All Purpose Sauce, thyme, and bay leaves. Stir to combine. Bring mixture to boil., then reduce heat to medium-low, cover and simmer 1 hour, stirring occasionally.
Melt butter in a large pot over medium heat. Add potatoes, onion and carrots. Sauté vegetables until golden, about 20 minutes.
Add vegetables to beef stew and simmer uncovered until vegetables and beef are very tender, about 40 minutes. Serve with chopped parsley.
