Ingredients

Servings: 4-6

Ingredients:

1/2 pound Chorizo

1 tbsp olive oil

2 cloves garlic minced

1 sweet onion diced

1 poblano pepper diced

2 tbsp flour

1 1/4 cups whole milk

1 roma tomato diced

1 tbsp Country Bob’s Seasoning Salt

16 oz Oaxaca Cheese pulled into smaller pieces

½ cup chopped cilantro

¼ cup pickled jalapenos

Dice sweet onion, poblano and roma tomato. Mince garlic, chop cilantro.

Heat a cast iron pan over medium. Add chorizo and cook until browned, about 5-8 minutes. Once chorizo is cooked, remove from the pan and set aside. Add olive oil to the skillet then add garlic, onion and poblano and cook for another 3-4 minutes.

Add flour and stir until well incorporated. Reduce heat to low and slowly add milk and tomatoes. Continue stirring until the sauce thickens. About 4-5 minutes Turn the heat down and stir in cheese until smooth. Season with Country Bob’s Seasoning Salt and stir in half of the chorizo and half of the cilantro.

Turn oven to broil and place under broiler until golden brown, about 2-3 minutes. Top with remaining chorizo, cilantro and pickled jalapenos then serve!
