Elote Bruschetta

Ingredients:
4 baguette slices
1 cup of corn (either cut off cob or from a can)
1 tbsp butter
1/4 cup grated Oaxaca cheese
1 tbsp Country Bob’s Seasoning Salt
6 cherry tomatoes cut into slices
1/4 cup feta cheese
1/4 cup chopped cilantro
3 tbsp mayo
2 slices bacon – cooked and crumbled

Prep ingredients by grating Oaxaca cheese, slicing cherry tomatoes, chopping cilantro, and cooking/crumbling bacon.

Preheat a grill to medium heat. Spread mayo on each baguette slice and grill for about 5-6 minutes until toasted. Set aside.

Heat a small pot to medium heat and add butter. When butter melts, add the corn and saute for 4-5 minutes. Add Country Bob’s Seasoning Salt and Oaxaca cheese and stir until cheese is melted. Turn heat off and set aside.

Build bruschetta by placing cherry slices on the bottom, followed by your cheesy corn. Top with feta cheese, cilantro and bacon and your bruschetta is ready to serve!
