Green Chili Cheddar Burgers

How do you make your neighbors green with envy? Serve these Green Chili Cheddar Burgers at your next barbecue. Depending on your tastes, you can either go hot or not with the chiles.

2 lbs 80/20 ground beef

4 Buns

2 Large hatch or Anaheim chiles. You can substituent canned chiles; hot or mild

8 slices Cheddar cheese

4 tbsp Butter

2 tbsp Country Bob's All Purpose Sauce

2 tbsp Country Bob's Seasoning Salt

2/3 cup Mayonnaise

2 Dill pickle spears (diced)

1/2 cup Onion (diced)

2 tbsp Olive oil

2 tsp Paprika


  1. Turn oven to 425 and move rack to the top leaving about 6 inches of space. Oil your hatch chilies and bake them for 10 minutes per side on a foil lined baking sheet. Once finished, place in a bowl and cover with plastic wrap and set aside.

  2. Combine Mayo, Country Bob’s All Purpose Sauce, the diced dill pickle, diced yellow onion, lemon juice and sweet paprika in a small bowl. Mix and set aside.

  3. Go back to your hatch chilies and peel the skin off. Open them up and take the stems and seeds out. Once you’ve done this, dice the chilies up and set aside.

  4. Preheat a griddle or pan to medium high. Roll your beef patties into 4 equal sized balls. Drizzle a little olive oil on each one then smash flat with parchment paper.

  5. Butter your buns and toast them on the griddle until brown then set aside.

  6. Season the beef with Country Bob’s Seasoning Salt and sear for about 3-4 minutes. Flip the patty and top with a single cheddar cheese slice and some of the chopped green chilies on each patty.

  7. Cover the patties with a lid for 3-4 minutes to help melt the cheese. Once melted, stack 2 patties on a bun, top with your Country Bob’s Thousand Island Sauce and enjoy.
