Hash brown and Sausage Skillet with All Purpose Gravy

1 red bell pepper
1 red onion
2 jalapenos
1 large russet potato
6 links country style breakfast sausage
2 eggs
4 cloves garlic
2 tbsp butter
1 cup beef stock
3 tbsp cornstarch
2 tbsp Country Bob’s All Purpose Sauce
1 tbsp Country Bob’s Seasoning Salt
2 tbsp olive oil

Prep all of your veggies by slicing the red bell pepper and 3/4 of the red onion into strips, slicing the jalapeno into circles, dicing the russet potato, and mincing the garlic. Mince the remaining 1/4 of red onion.

Heat a pan to medium heat. Add the olive oil then add the potatoes. Cook the potatoes for about 10 minutes until they are starting to brown and becoming soft. Add the breakfast sausage and cook for another 5-6 minutes until browned and cooked through. Add the veggies along with Country Bob’s Seasoning salt. Stir and cook for about 10 minutes until the veggies are soft. While this is cooking, start on the gravy.

In a separate pot, melt the butter over medium heat then add garlic and the minced onion. Sautee for 4 minutes. While onion and garlic are cooking, mix Country Bob’s AP sauce, cornstarch and beef stock in a bowl. After 4 minutes, pour the Country Bob’s AP Sauce mixture into the pot and stir for about 10 minutes until it thickens.

Push the veggies and sausage in the main pan to one side and add the eggs. Scramble the eggs on the one side until cooked through then combine with the rest of the skillet. Pour gravy over the top and breakfast is ready!
