Ingredients

1 box  BEN'S ORIGINAL" Flavored Grains, Long Grain & Wild Fast Cook, 6.2 oz.(makes 3 cups cooked rice)

3 cups pulled pork

1 cup of your favorite Country Bob’s BBQ sauce

4 Bell peppers

¼ cup chopped red onion

½ cup shredded mozzarella 

4 slices provolone cheese

¼ cup chopped cilantro

¼ thin sliced fresh jalapeños

2 limes cut into wedges

Preheat oven to 375°

Cut tops off peppers and remove seeds.Cook rice per instructions on box.

After rice is done mix in all pulled pork, mozzarella cheese and 1 cup of BBQ sauce and stir together.Fill peppers with rice mixture and place in a baking dish.

Bake at 375° for 40 minutes. After baking for 40 minutes top with sliced provolone and cook until provolone cheese is melted. Garnish with chopped red onion, cilantro and sliced jalapeños.

Drizzle top with more BBQ sauce and squeezed lime juice
