Roast Beef Wrap

2 burrito sized tortillas
3 cups Country Bob’s Marinade
1 pound chuck roast or top round roast
1 cup fresh spinach
1 large tomato
2 tbsp mayo
1 tbsp cream
1 tbsp horseradish
1/4 cup red onion (thin sliced)

Pour Country Bob’s Marinade into a bowl. Add the roast to the marinade and let it sit for 2 – 24 hours in the fridge. Remove and let sit at room temp for 30 min. Preheat the oven to 500 degrees. Insert a temperature probe into beef and roast for 5 minutes per pound. Turn off the oven and let beef sit until it has reached an internal temp of 135. Let rest 10 minutes then carve beef into thin slices.

Cut the tomato and red onion into thin slices. Combine mayo, cream and horseradish. Stir to combine and set aside.

Warm up your tortilla then place a bed of spinach in the middle. Top with tomato, sliced beef, onion and horseradish ranch. Fold the tortilla over the filling then fold each side inwards. Roll the wrap forward and serve! (Optional: You can toast the wrap on the seam to prevent it from reopening)
