2 cups tortilla chips
1 pound country style beef ribs
1/2 cup Oaxaca cheese – grated
1/4 cup feta cheese crumbles
1/4 cup cilantro chopped
1/4 cup Country Bob’s Smoked Garlic and Brown Sugar Wing Sauce
Jalapenos for garnish
Avocados for garnish
Pickled onions for garnish
Salt and pepper

Directions

Season country style ribs in salt and pepper. In an instant pot, using the saute function, brown each side of the ribs until they begin to release oil. After about 8 minutes, turn saute function off, add ¼ cup Country Bob’s Smoked Garlic and Brown Sugar Wing Sauce, stir and place lid on the pressure cooker. Pressure cook for 1 hour and let the pressure cooker naturally release for 10 minutes.

Remove beef and shred with a fork. Add some of the liquid from the pot to the beef and set aside. Place chips on a foil lined baking sheet or an oven safe dish, and top with grated Oaxaca cheese, followed by the beef and jalapenos. Broil for about 2-3 minutes until the cheese melts. Remove and top with cilantro, avocado, pickled onions and any other nacho toppings you’d like!
