Southwestern Spatchcock Chicken

2 tbsp Country Bob’s Seasoning Salt

1 tbsp cumin

1 tbsp paprika

1 tbsp chili powder

1 tbsp chipotle powder

1 stick butter (softened)

1 chicken – 2-3 pounds

Preheat the oven to 300 degrees. Combine Country Bob’s Seasoning Salt with cumin, paprika, chili powder, and chipotle powder. Add to butter and mash with a fork to combine. Set aside.

Using sharp scissors, carefully cut out the backbone of the chicken and dispose. Rinse chicken out to remove any pieces of bone and flesh. Pat chicken dry with a paper towel then use your softened southwest butter and smear it under the skin of the chicken. Make sure to smear it on the breast, legs, and thighs. Smear any excess butter on the skin of the chicken.

Cook in the oven for 2 hours basting with the juices halfway through. Remove and let the chicken rest for 5 minutes before carving. Serve immediately!
