Tilapia Po' Boys
A Tilapia Po Boy recipe will, of course, use tilapia fish. Feel free to substitute your favorite kind of fish or even shrimp. Add some Country Bob’s for that N’Orlins to-do sandwich that you-do so well! This is truly a ‘big easy’ sandwich.

Ingredients
3 (6 oz.) tilapia fillets, cut into strips or cubes
0.50 cup flour
1 tbsp. seafood seasoning
2 tbsp. canola oil
1 baguette, split and quartered
1 cup shredded lettuce
Country Bob’s All Purpose Sauce
1 cucumber (thinly sliced) - may substitute pickle chips
4 small Roma tomatoes, sliced
1 small onion, sliced
Cilantro leaves
Mayonnaise (optional)
Directions

Soak fish in bowl of Country Bob’s All Purpose Sauce.

In a shallow bowl, combine the flour and Country Bob's Seasoning Salt. Dredge the tilapia with flour mixture.

Heat oil in a large nonstick skillet over medium heat until 350 °F.

Cook tilapia; 3 to 4 minutes per side.

Split and quarter baguettes.

Once all fish is cooked, chop into large chunks and gently mix with mayonnaise and cilantro in a bowl.

Scoop fish mixture into bread halves and top with lettuce, cucumber, onion and tomato. Serve!
TIP!
You can substitute any seafood on this dish. One of our favorites is oysters, but you can do shrimp, scallops, or even crab.
