AP BBQ Pulled Pork Jalapeno Poppers
Fresh jalapenos filled with cream cheese wrapped in crispy bacon. They are everyone's favorite tailgating snack!
4 large jalapenos
4 oz cream cheese
4 tbsp Country Bob’s All Purpose Sauce (divided)
8 strips of bacon
1/2 cup of leftover pulled pork
1 tbsp honey
1/4 cup mayo
Cut jalapenos in half and remove seeds. Heat oven to broil and roast jalapenos for 8 minutes until skin is blistered. Remove and allow to cool.
Combine cream cheese with 2 tbsp of AP sauce and stir until well blended.
Preheat oven to 425. Once jalapenos are cooled off, place a spoonful of the AP cream cheese in each jalapeno. Top the cream cheese with pulled pork. Wrap a strip of bacon around each popper and place in the oven for 10-15 minutes until the bacon crisps up. You may need to increase temp to broil at the end to crisp the bacon.
While the jalapenos are cooking, combine honey, mayo and the other 2 tbsp of AP sauce in a bottle and shake to combine. Remove poppers from the oven and drizzle with a little sweet AP mayo and serve immediately!
