BBQ Braised Beef Shank Loaded Baked Potato
This isn't your typical baked potato - this is a Barbecue Braised Beef Shank Loaded Baked Potato! The shredded beef shank is smothered in our Sweet Honey Barbecue Sauce and laid over a fluffy potato topped off with cheese, red onion, and chives.

Ingredients:
1 pound beef shank
1 cup Country Bob’s Sweet Honey BBQ Sauce
2 tbsp butter
2 large Yukon gold potatoes
1/2 cup shredded cheddar cheese
2 tbsp diced red onion
2 tbsp olive oil
1 tbsp chives
Salt and Pepper to taste

Preheat the oven to 400. Using a fork, poke holes in each potato then coat in olive oil. Salt each potato then place in the oven for 45-50 minutes.

While the potato is cooking, season the beef shank with salt and pepper. Sear on medium high for 2-3 minutes per side to brown the beef. Place beef shank in a pressure cooker or instant pot with Country Bob’s Sweet Honey BBQ Sauce and pressure cook for one hour. If you do not have a pressure cooker, preheat the oven to 400 degrees and cook beef in an oven safe pot with a lid for 3 hours.

When potatoes are done, remove from the oven and let cool for 10 minutes. Remove the beef shank from the pressure cooker and meat should shred off the bone. Shred meat and dispose of cartilage and bones. Set meat aside.

Cut potato down the middle and place one tbsp of butter in each potato. Salt and pepper to your desire then add cheese. Place a scoop of braised beef shank on top of the cheese then place more cheese on top of the beef shank. Garnish with red onion, chives and more salt and pepper if you please. The potatoes are ready to serve!
