Directions
1
Preheat a skillet to medium. Pour the olive oil in the pan and add the yellow onion, green onions and garlic. Cook until softened, about 4 minutes.
2
Add the chicken stock and the apple cider vinegar and bring the mixture to a light boil. Add your pork belly pieces to the boil, cover the skillet and reduce the heat to medium low. Let the pork belly simmer for about 2 hours.
3
Heat up the grill to medium high heat. Once the pork belly is tender, dry each piece off then coat in Country Bob’s Barbecue Sauce. Place the pork belly on the grill and cook for 1-2 minutes per side.
4
Turn the heat down to medium low, brush some more Country Bob’s Barbecue Sauce on each piece of pork belly, close the grill and let it caramelize for 3-4 minutes.
5
You can repeat step 4 to get stickier pork belly with more caramelization. Once you’ve got it to your liking place the pork belly in a bun, top with cilantro, fried onions, jalapeños and more sauce. Then enjoy!
