Ingredients

Ingredients:

3 cups frozen tater tots

Juice from 1 lemon

1/2 cup mayo

1/4 cup sour cream

2 hard boiled eggs diced

2 tsp Dijon mustard

1 tbsp Country Bob’s Cajun Seasoning Salt

1 clove garlic minced

2 tbsp chopped dill

2 tbsp chopped parsley

2 tbsp chopped chives

1 cucumber diced

1/4 red onion minced

1 tsp cracked pepper

Preheat the oven to 400. Bake tater tots for 10 minutes to soften, then remove them from the oven. Spray the bottom of a glass with olive oil and use the glass to flatten each of the tater tots. Once tater tots are flattened, sprinkle Country Bob’s Cajun Seasoning Salt on the tater tots and return to the oven for 15 minutes until crispy.

While tater tots are cooking, combine lemon juice, mayo, sour cream, hard boiled eggs, Dijon, garlic, dill, parsley, chives, cucumber, red onion and cracked pepper in a bowl. Stir to combine and set aside.

When tater tots are done, allow them to cool then add to the mayo mixture and stir to combine. Once all tater tots are covered in the mayo mixture, the dish is ready to serve!
