Ingredients

3 cups of beef broth

5 Dried Guajillo Chiles (stems and seeds removed)

2 Dried Ancho Chiles (stems and seeds removed)

4 garlic cloves 

2 tsp oregano

2 tsp thyme

1 tsp cinnamon

2 bay leaves

2 lb chuck roast

2 tbsp olive oil

2 tbsp Country Bob’s Seasoning Salt 

4 pack dry ramen noodles

Toppings:

Lime Wedges

Diced Onion

Cilantro

Radishes

Jalapeno 

Soft Egg

Bring a cup of water to a boil. Place the stemmed and seeded chiles in the water and turn off the heat and place a lid on the pot. Let sit for 5 minutes or so until the chiles are pliable. Add the chiles, garlic, oregano, thyme, cinnamon, bay leaves and 3 cups of broth to a blender. Blend until smooth then strain the sauce and set aside.

Heat a large Dutch oven to medium high heat. Season the chuck roast with Country Bob’s Seasoning Salt and sear on all sides in the olive oil coated Dutch oven. Add the blended chili sauce to the pot, cover the pot and reduce heat to medium low. Let the meat simmer for 2-3 hours until the beef begins to fall apart.

Remove beef from the pot and shred. Place Ramen noodles in individual bowls and pour the juice from the Dutch oven equally between the bowls. Place a plate on the bowls for about 5 minutes to give the ramen time to soften. Top with lime wedges, diced onion, cilantro, jalapeno, radish or soft eggs and enjoy!
