Country Bob’s Cajun Chicken Sandwich
You can't go wrong with a classic chicken sandwich! Juicy chicken with melty cheese topped with crispy bacon, lettuce, and tomatoes, all held together with a toasted brioche bun.
2 buns (Brioche goes best)
1 tbsp Mayo
2 tbsp Country Bob’s Cajun Seasoning
1 tbsp Country Bob's Seasoning Salt
1 tbsp dried Cilantro
2 thin cut chicken breasts
2 slices provolone cheese
4 leaves lettuce
1 tomato cut into slices
1/2 avocado cut into slices
4 strips of cooked bacon
2 tbsp olive oil
Heat a grill pan to medium high heat. Toast the bun on the pan until slightly browned, about 6 minutes. While the bun is toasting season the chicken breast with Country Bob’s Cajun Seasoning and dried cilantro. Coat each chicken breast in olive oil then sear on the grill pan for about 4-5 minutes. Flip the chicken breasts then top with provolone cheese. Place bacon on the cheese and allow to melt for an additional 4-5 minutes.
Assemble the sandwich by laying the sliced avocado on the bottom bun followed by the lettuce, chicken breast and bacon, tomato slices, and mayo. Eat with French fries or your favorite side dish!
