Nashville Hot Catfish

1 lb of catfish cut into boneless nuggets
1 cup buttermilk
2 eggs
2 cups cornmeal
2 splashes of hot sauce
1 tbsp Country Bob’s Seasoning Salt
2 tbsp paprika
2 tbsp cayenne pepper
1 tbsp brown sugar
1 tsp garlic powder
2 tsp ground pepper
4 cups vegetable oil for frying

In a bowl, crack the eggs with the buttermilk and mix. Mix in a few dashes of hot sauce and set aside. In a small bowl mix the cayenne pepper, ground pepper, garlic powder, Country Bob’s Seasoning Salt, and paprika. Divide this seasoning mixture in half. Add the brown sugar to one of the halves.

Pour the seasoning without brown sugar into the cornmeal and mix thoroughly. Dip the catfish in the buttermilk/egg mixture and let any excess fall off.

Move to the cornmeal mixture and fully coat each buttermilk dredged nugget in cornmeal. Set your finished nuggets to the side on parchment paper. Repeat until all nuggets are breaded.

Pour oil in a Dutch oven or large pot and heat to medium. The oil should be around 350 degrees. Carefully fry nuggets until golden brown, about 2-4 minutes. Work in batches to not overcrowd the pot.

Once nuggets are done, take about 3 tbsp of the frying oil and mix with the other half of seasoning. Pour this over your nuggets and serve!
