Pulled Pork Tacos
Pulled Pork Monday makes the perfect Taco Tuesday! All you’re missing are the chips and guac!
1 medium tomato, diced
1 avocado sliced
1 small jalapeño, seeded and diced
¼ cup pickled jalapeños
¼ cup chopped red onions
¼ cup chopped cilantro
¼ cup queso fresco crumbled
¼ cup shredded mozzarella
2 limes cut into wedges
¼ cup sour cream
½ cup of your choice of Country Bob’s BBQ sauce
2 cups leftover pulled pork
8 small corn or flour tortillas
Heat up leftover pulled pork in the microwave or in a pan on the stove or grill.
Heat tortillas on a skillet or on bbq grill until warm and lightly browned on both sides.
Load tacos with your favorite toppings
