Ingredients

Country Bob’s Shepherd’s Pie

Servings: 4-6

Meat Filling Ingredients:

1 pound ground beef

1 carrot, cut into small squares

¼ cup peas

¼ cup corn

¼ cup small chopped green beans

1 yellow onion diced

3 cloves garlic minced

2 tbsp olive oil

3 tbsp flour

¼ cup beef broth

1 tbsp Country Bob’s Seasoning Salt

2 tbsp Country Bob’s All Purpose Sauce

2 tbsp tomato paste

Mashed Potato Topping:

3 large russet potatoes cut into cubes

3 tsp Salt

4 tbsp butter

1/3 cup cream

¼ cup parmesan cheese

3 cloves garlic

Prepare potatoes by peeling and cutting them into equal sized cubes. Boil potatoes with garlic until soft. About 10 minutes. Drain potatoes, add butter, cream, cheese and salt, and mash potatoes until smooth. Set aside

Heat a pan to medium heat. Add olive oil, diced onion and minced garlic to pan. Cook until fragrant, about 5 minutes. Add the ground beef and cook until browned. Add carrots, peas, corn, green beans, flour and Country Bob’s Seasoning Salt. Stir until well combined, then add tomato paste and Country Bob’s All Purpose Sauce. Stir, then add beef broth. Continue to stir and cook for 5-6 minutes.

Preheat oven to 400. Empty meat filling into a large casserole dish and smooth with a spatula until flat. Place dollops of mashed potato on top of the meat filling and smooth so meat filling is completely covered. Use a fork and rake the potatoes and give some texture to the top layer. Bake the shepherd’s pie in the oven for 30 minutes (place a pan underneath the dish to catch any of the gravy that bubbles out). Once done, let shepherd’s pie sit for 15 minutes then serve!
