Southwestern Meatloaf Muffins

Ingredients:
1 pound ground beef
1 small red bell pepper diced
1 small white onion diced
4 cloves garlic minced
1 jalapeno diced
1 tbsp Country Bob’s All Purpose Sauce
3 tbsp Country Bob’s Cajun Seasoning
5 eggs
1/2 cup panko bread crumbs
Sliced avocado for serving
4 English muffins
4 strips thick cut bacon

In a large bowl, combine ground beef, diced red bell peppers, diced white onion, minced garlic, diced jalapeno, Country Bob’s AP Sauce, Country Bob’s Cajun Seasoning, panko bread crumbs, and one egg. Mix until very well combined then form into 4 patties.

Preheat the oven to 350. Place a rack over a baking pan, then place foil on the rack. Poke holes through the foil to allow the grease to fall into the pan. Wrap the edge of each patty with a strip of bacon and place on the foil/rack. Bake for 15-20 minutes until the bacon is crisp.

While the meatloaf is cooking, fry the other 4 eggs in some butter sunny side up and set aside. Place the Meatloaf on a toasted English muffin. Top with a fried egg and avocado and the meatloaf muffin is ready to serve!
