Steak Fajita Stew

Ingredients:
1 yellow bell pepper sliced into strips
2 jalapeños sliced into strips
1 red onion sliced into strips
5 garlic cloves minced
1 pound sirloin cut into Cubes
3 tbsp olive oil
2 tbsp flour
1 tbsp Country Bob's Seasoning Salt
2 tsp cumin
2 tsp chili powder
2 tsp garlic powder
4 cups beef stock
1/2 cup sour cream
1 handful Chopped cilantro

Season steak cubes with Country Bob's Seasoning Salt, cumin, and garlic powder.

Heat a pot to medium high heat and add one tbsp of olive oil, then add steak Cubes. Brown steak on all sides then remove. Add the other two tbsp of olive oil and add garlic. Cook for 3 minutes then add bell pepper, jalapeño, green onion, and red onion. Cook for 6 minutes while stirring. Add flour to the veggies and stir until well coated. Cook for 5 minutes then add beef stock and continue stirring. Bring stew to a boil then cover and reduce heat to low.

Cook stew for an hour and 15 minutes on low stirring occasionally until steak is extremely tender. Remove the lid, add sour cream and cilantro and stir.

Serve stew topped with avocado, tortilla strips and cheese!
