This a Cornish Hen recipe makes a fun evening for the family. Poultry perfection!
1 18 oz. bottle Country Bob’s Marinade
1 tbsp. Country Bob’s Seasoning Salt
1 onion, chopped
Red bell pepper, chopped
1 garlic clove, minced
3 medium potatoes, thinly sliced
Thaw the hen overnight in refrigerator. Remove hen from package and wash thoroughly. Place hen in marinade for about an hour. Flatten out the hen. Insert garlic and a few pieces of onion inside the hen. Use a small rack to elevate Cornish hen on grill.
Place some wood chips on grill and allow hen to cook on medium heat for about 20 minutes.
Place potatoes in aluminum foil. Baste with Country Bob's All Purpose Sauce. Add Country Bob's Seasoning Salt. Place Onions in aluminum foil and allow to cook.
Turn grill to medium high heat. Flip hen over on to grill and allow to sear. Baste with Country Bob's All Purpose Sauce and Marinade mix often. Continue to cook until hen comes to an internal temperature of 165 degrees F. (treat it just like you would chicken, because that’s what it is!)
Drop broccoli into boiling water for two minutes. Alternatively you can use a steamer bowl and microwave. Rinse with water prior to adding to grill.
Add bell pepper and broccoli to grill. Be careful as they will burn easily. You just want them to heat up and get some of that grill flavor.
